Panzanella is an Italian salad made with soaked bread and onions.
It's typically served cold in summer.
One dish= 140 calories.
INGREDIENTS:
Stale bread, red onions, cucumber, basil, olive oil, vinegar and salt.
VARIATIONS:
- Today, Panzanella is never made without tomatoes.
- For more taste, mozzarella, olives and celery are also added.
- For a richer meal, some add boiled eggs and tuna.

What to do with stale leftover bread?
For centuries, villagers in Tuscany soaked it in water and made of it a refreshing salad with onions served in a soup bowl known as "zanella", it was known as "pane e zanella" (bread and bowl).
Renaissance poet Bronzino praised the recipe in his 14th-century poem "Rime alla cipolla" (Rhymes of onion).
And as the saying goes, waste not need not. :)
